It’s Monday, our holiday is over and things are back to normal. That means having more healthy meals at home and making my menu plans. Highly necessary because there’s a HUGE haul of veggies in the fridge.
Here’s this week’s addition to it (apologies for the bad pic).
- silverbeet
- green beans
- garlic
- mini plum tomatoes
- red beets
- red Batavia lettuce
We still got lots of veggies left from last week, and from another type of CSA haul. From the top of my head: tomatoes, potatoes, corn on the cob, leek, fennel, radishes, sprouts, spring onion, spinach, white paprika, courgette, turnips, pumpkin, pointed cabbage, carrots, string beans.
So let’s dig in and make a dent!
Menu plan September 16th – 19th
- SUN ~ Saffron garlic rice (Veganomicon p.119) and Italian style sautéed spinach & tomatoes (p.106) with a tofu burger that’s a souvenir from France and radish salad with sprout greens and mustard dressing (inspired by Zonnig zomers tafelen p.21).

- MON Indonesian ~ Nasi goreng and leftover tofu tausi takeaway (= black bean sauce) with some extra veggies added, simple cabbage salad (Feestmenu’s p.68) and emping.
- TUE
Mexican ~ Chilli with tortillas and a little leftover rice, corn on the cob, guacamole and coleslaw with avocado (Groentegerechten p.58).Change of plans: Indonesian ~ rice with sambal goreng boontjes á la Mr Gnoe.

With our CSA veggies from Amelis’Hof comes a leaflet, de Amelisbode, usually containing a recipe for some of the week’s vegetables. This week it’s a savoury ‘Picnic Pie’ with oven-roasted garlic, tomatoes and rosemary. I only had to substitute the anchovies to make it vegan/vegetarian! The rosemary came from the herb garden on our balcony.
This recipe is definitely a keeper so I’d like to share it with you for Beth Fish’s Weekend Cooking and the Whip Up Something New! challenge (which I’m hosting this month btw). It’s the ultimate summer pie! And since I made a few more adaptations I feel it’s okay to rename it. :)
Amelis’Hof Summer (Picnic) Pie with Garlic and Tomatoes
Ingredients
Serves 2.
- olive oil
- 3 sun-dried tomatoes
- 1 head of garlic
- 350 gr tomatoes
- 1 small or 1/2 big red onion
- 3 sheets of vegan puff pastry
- 12 black olives
- 1 tbs caper berries
- 1 tbs of chopped rosemary
- (optional) some chopped oregano or other fresh herb of you choice
- freshly ground salt & pepper
Preparation
- Preheat oven at 200 degrees Celsius.
- Soak sun-dried tomatoes in hot water.
- Separate garlic cloves — leave the skin on! — and put them in some olive oil in a high oven-proof dish.
- Cut tomatoes in thick slices, put them in an oven dish.
- Slice red onion and add to tomatoes.
- Pour a tablespoon of olive oil over the tomato-onion mix, and add some freshly ground salt & pepper.
- Roll out pastry dough and fill baking dish, punching a few holes in the bottom with a fork. Layer with beans or ceramic beads for pre-baking.
Whatever you’re using for blind baking; it’s always smart to put some parchment paper in first to prevent your beans/beads from sticking to the dough… I often forget. ;)
- Put all three dishes in the oven and bake puff pastry for 10 minutes, tomatoes and garlic 15 minutes.
- In the meantime mince olives, caper berries (you may want to rinse these first if they’re really salty) and soaked sun-dried tomatoes.
- After 10 minutes take your pie dough out of the oven, remove blind filling and bake for another 5 minutes.
- Now your tomatoes, garlic and puff pastry should be ready at about the same time. Allow the roasted garlic to cool for a few minutes.
- Peel the garlic cloves, mince, and mix HALF of it with the olives, sun-dried tomatoes and capers.
- Spread the mixture on the bottom of your pie, layer with tomatoes and onion, add rosemary (& other fresh herbs of your choice) and the rest of the crushed garlic. Sprinkle with a little more salt & pepper.
- Put your picnic pie into the oven for another 5-10 minutes.

We had this quiche accompanied by a green salad with asparagus, more fresh herbs from our ‘garden’ (thyme & oregano), chopped walnuts & pistachios and a balsamic vinegar dressing with extra virgin olive oil, agave syrup, salt and pepper. I’m afraid the picture has a weird colour: we had the shades down because it was so sunny!

Here’s the recipe for the tzatziki that I took in bento #58. I’ts really easy to make and tastes great. A fresh dish that will make you think of vacation on any summer day!
Ingredients
- 1 organic cucumber
- salt
- 3,5 dl Greek yoghurt
(I like it full-cream) - 1 piece of garlic
(2 if you wish)
- 2 table spoons of olive oil (extra virgine)
- pepper
- 2 table spoons of fresh dill (finely cut); see Gnoe’s tip for cutting herbs below!
Preparation
Wash and roughly grate the cucumber (including the skin). Because you’re not peeling the cuke, it’s really best to use organic! Put in a colander, sprinkle with salt en put a weight on it for half an hour. I often use a saucer and small pan filled with water to weigh something down.
In the meantime crush the garlic. Mix yoghurt with garlic, olive oil, dill and pepper to taste (blend by mixing). When the cucumber is ready it can be added to the mixture.
You can make tzatziki a while in advance if it’s kept refrigerated.
Use
Use as a starter or side dish with salad and black olives (think mezze!), as vegetable dip, for a picnic or buffet — you can even put it on your sandwhich, but it will get soggy ;) I like to serve it with Turkish pide bread.
To give you an idea of the quantity: it’s about 4 servings as entree.
Gnoe’s tip for cutting herbs
An easy way to cut dill (or parsley) is putting the leaves in a cup and snip-snap with your kitchen scissors! You can’t use this method for all herbs though; e.g. basil leaves should be torn to allow their fragrances to appear.
Last but not least: I like the smoothness of a tzatziki that’s low on garlic but some people might want to use 2 pieces of garlic :-o In that case, remember my post with natural tips against garlic smell ;)
Oops, it took me a whole week to post about bento #52! It came to work on Wednesday May 20th — and it’s been my last bento up until today. I was too busy! And I don’t have to go to the office for a while now, so bento’s will be sparse in the next few weeks.
In the picture my lunch looks quite cute — but don’t be fooled! The hint is a packet of Smint…
The red stuff you see in the left hand tier is Mediterranean bean paste, which erm.. had a bit too much garlic in it :-o I don’t like tasting garlic all day, so I came prepared.
Here’s another one of Gnoe’s tips: natural & healthy remedies against garlic smell (and taste) are drinking milk, eating an apple and — last but certainly not least — chewing on a bunch of parsley. That’s after you’ve eaten garlic, not before ;) In my experience these solutions work best if you don’t apply them immediately, but after you’ve brushed your teeth without result.
Well, my apple is not in the picture but it did come along. And in the photo you can also see some fresh parsley (not enough though, LOL) — and the before mentioned package sugar free Smint for emergencies ;)
What else could be found in bento #52?
- red leaf salad (hiding)
- 3 conchiglioni (pasta seashells) with herbs, slightly greased with olive oil so they wouldn’t stick together
- black olives
- slices of orange sweet bite
- capers, small & large
- yellow cherry tomatoes
- parsley (like I said)
- yogurt coated apricot
- roasted sunflower seeds as topping for:
- leek salad (leeks marinated in a basil-garlic dressing)
- Mediterranean bean paste made of white beans, tomato, red bell pepper (paprika), onion, olive oil and oven-roasted garlic (to eat with the pasta)
- grated cheese for the conchiglioni
- pistachios and cashews
- cranberries
Both the leek salad and the bean paste were easy to make. But… the bean spread was best on the day it was prepared. Next day it had gotten a bit ‘watery’ and needed the salty & sour addition of capers and olives.
So, bento #52 was like a wolf in sheep’s clothes: looking cute, but with a sharp bite! Well, I got a lot of work done that day with few colleagues disturbing me ;) Which is good — is it? It was really my day off… :\
Het is alweer even geleden dat ik het beloofde, maar ik zou het recept voor in honing geroosterde wortelgroenten nog posten. Een lekker gerecht voor mede-groentetas-bezitters die in de winter soms ook hun berg knollen zien groeien… Ik geef jullie het originele recept zodat je een idee hebt van de hoeveelheden, maar eigenlijk is het juist zo makkelijk dat je gewoon kunt pakken wat je voor handen hebt ;)
Nodig voor 4 personen:
- 60 g boter (niemand heeft mij horen zeggen dat het een light recept is ;)
- 2 el honing
- paar takjes tijm
- 3 wortels (evt. geschild), in grote stukken
- 2 pastinaken, geschild en in grote stukken
- 2 zoete aardappels (1 oranje, 1 wit)
- (8 kleine ingemaakte uien, geschild)
- 8 aardperen
- zout & peper
- 1 knoflookbol
Variatie: wortelpeterselie, pompoen, venkel, enz.
Bereiden:
- Oven voorverwarmen op 200 graden Celsius
- Knoflookbol in aluminiumfolie wikkelen
- Boter in een vuurvaste schaal op matig vuur smelten
- Honing en tijm toevoegen en even roeren
- Schaal van het vuur halen en de wortelgroenten toevoegen, met wat peper en zout naar smaak voorzichtig omroeren zodat alles bedekt raakt met de honingboter
- Schaal in de oven doen en de knoflook in folie erbovenop leggen
- Laat de groenten ca. 1 uur in de oven roosteren maar schep ze regelmatig even om voor gelijkmatig garen & karameliseren
- De knoflook is waarschijnlijk eerder klaar: folie eraf halen en teentjes pellen als ze wat zijn afgekoeld
- Knoflookteentjes door de groenten lepelen en klaar!
Wij hebben gewone aardappels gebruikt en rode ui in plaats van ingemaakte uitjes. Ook hadden we een restje venkel over dat erdoor ging, en wortelpeterselie. De knoflook vond ik wat veel zodat we een aantal teentjes — die tot puree waren gestoofd — hebben bewaard voor een roerbakgerecht enige dagen later.
Dit is echt een geslaagd kliekjesrecept om het groentenvak van je koelkast leeg te maken! :)
Het recept wordt veganistisch in plaats van vegetarisch wanneer je plantaardige margarine gebruikt en suiker in plaats van honing. Los de suiker dan wel eerst in de warme boter op. Je kunt natuurlijk ook een plantaardige olie nemen, maar liever geen olijfolie omdat de smaak daarvan teveel overheerst.
